Paleonnaise
This is my second version of my version of mayonnaise. Initially, I used olive oil; however, I just felt like it was too strong of a flavor. I changed the oil over to avocado oil and the smoked paprika for a little more flavor.
This recipe yields about 1 cup.
1 egg yolk
1 tablespoon fresh lemon juice
pinch of sea salt
1/2 teaspoon dry mustard
1/8 teaspoon smoked paprika
1/8 teaspoon ground red pepper (cayenne)
1 cup mild olive oil
Add the egg yolk, sea salt, dry mustard, paprika and cayenne and lemon juice to a food processor or blender and blend until frothy. Slowly add the oils a little at a time and blend continually.
Refrigerate.
