 Homemade Mixed Berry Creamsicles


  • 13.5 ounce can coconut milk
  • 1/4 cup raw honey
  • 1 1/2 cups mixed berries
  • 1 teaspoon vanilla


  1. In a small saucepan, heat honey, berries and vanilla on medium heat.  Smoosh the berries against the side of the pan while they are heating. Continue until desired “chunkiness”. Remove from heat.
  2. Add coconut milk to saucepan.  Stir.  Pour mixture into popsicle molds (or paper cups with popsicle sticks).
  3. Freeze overnight.
  4. Enjoy!

  2. Is the honey in there as a "Scientific" ingredient, or just as a flavoring? I'm trying to keep my sugar levels fairly steady. Just curious; thanks!

      It's just a sweetener. I don't use refined sugar anymore, but play with honey and agave sometimes. Also, I recently found maple sugar crystals that have been good too. Good luck!

  5. why heat it at all? I just put my into a blender and zap it a whirl then load it into containers to freeze. You loose the benefits of raw honey by heating it. this way you are eating it closer to fresh as well and you get all the benefits from the enzyme activity…. Jamie

  6. I made these the other day and while they taste great, I found the raw honey was a little overpowering – would decreasing the amount or leaving it out still work? Also wondering if mango would work for this too instead of berries.

  7. I didn't heat & they turned out great could defiantly leave out honey & next time i will be doing a Piña Colda version with pineapple yummmm!! Instead of berries..
