Surf, Fly and Oink with Spicy Aoili

When I was shopping today, among other things, I picked up some chicken breasts as well as some lobster tails that were on sale.  I had an idea to make Chicken Bacon Sliders, but I really wanted to use some of the lobster.  I started thinking of Surf and Turf…so why couldn’t I use the lobster with the sliders?  My husband said, “What a strange combination to use chicken and lobster together”…but I thought, at some point, someone thought that a lobster and cow would work.  So, I gave it a try.  If it didn’t work, I wouldn’t post it, but what the hell.  We thoroughly enjoyed it.  The aoli really brought it all together.  I hope you like it too!

Chicken Bacon Sliders
2 small lobster tails, steamed and sliced
2 Roma tomatoes, sliced thickly
2 cups spinach
pinch of sea salt
drizzle of olive oil

1/2 cup paleonnaise
1T Sriracha
1T parsley
1 tsp Old Bay Seasoning

Mix aioli ingredients and refrigerate while prepping your other ingredients.

Place spinach and salt in a skillet on medium heat. Drizzle lightly with olive oil. Cook until spinach is wilted…just a few minutes.  Set aside.

Start making your stacks.
1. Slider
2. Tomato
3. Spinach
4. Lobster
5. A dollop of aoili
