Caramel-Toffee Apples

Caramel-Toffee Apples

This is a recipe that is sure to be a kid-pleaser and also bring out the kid in the adults!  So much fun to make ~ so much fun to eat!!  (Note:  you’ll need a candy thermometer for this recipe).


Ingredients

  • • 6-8 lollipop sticks
  • • 6-8 apples
  • • 13.5 ounce can of coconut milk
  • • 1/2 cup organic coconut palm sugar
  • • 1 tablespoon coconut oil
  • • 4 tablespoons ghee or organic butter
  • • 4 tablespoons raw honey
  • • pinch of sea salt
  • • 1 teaspoon vanilla
  • • 1/8 teaspoon butter extract
  • • 1/2 cup pecan bits (optional)

Directions

  1. Prep apples (washed, dried and sticks in the top). Place on a parchment paper lined dish.
  2. In a pot on medium-high heat, blend first eight ingredients. Heat until boiling and then maintain at "soft crack" on the thermometer for 15 minutes, stirring continuously.
  3. Swirl each apple in the caramel (continue to keep on low heat). Smooth out caramel along the side of the pot. Dip in nuts (optional). Place on parchment paper.
  4. Refrigerate for at least 10 minutes to harden.
  5. Enjoy!
