Meal 2 of 31: Back to Basics
Who said that simplicity had to be boring? This is a plate of bacon, eggs, nuts, fat from the avocado, fruits, berries and veggies! You don’t have to go through all this trouble (unless you really want to!). The point is to load your plate with simple, tasty foods.
Note: If you want to shape your eggs, just grease the inside of a metal cookie cutter and then place on your heated skillet. Crack an egg inside the form. Cook for several minutes or until desired doneness. Then, take the skillet off the heat and cover. The steam will help cook the top. Remove metal cutter with tongs.
On this plate: egg, bacon, green pepper, orange slice, blueberries, star fruit, pomegranate seeds, tomato, avocado and almonds.
