Slammin’ Salmon

I used to think the only way to eat smoked salmon was atop a huge spread of cream cheese on a whole wheat bagel…healthy, right?!  Nope!  I thought that smoked salmon would be part of my past because I couldn’t imagine eating it any other way. <insert pouty face here>  But then I started experimenting a little.  One of my first creations was an Eggstraorginary Lox Benedict ~ it is even better than the bagel version, in my opinion.  But, I wanted to simplify this meal even more.  And the version below is straight to the point yumminess!

Slammin' Salmon


  • 4 ounces smoked salmon
  • drizzle of olive oil (this is where you want to break out your good stuff!)
  • squeeze of 1/2 a lemon
  • 1-2 teaspoons of capers (depending on your preference)
  • 1 shallot, finely diced
  • fresh dill, chopped (for garnish)


  1. Spread salmon slices across a plate.  Add the remaining ingredients.
  2. Enjoy!
