Pan Fried Tilapia with Tropical Relish
1 avocado, diced
1 mango, diced
1/4 cup diced watermelon
1/8 cup diced pineapple
2 teaspoons chopped cilantro
1 tablespoon lime juice
4 tilapia fillets
1/2 cup coconut flour
1/4 cup coconut oil
Combine first 6 ingredients in a bowl and set aside.
In a large skillet, heat coconut oil over medium heat. While heating, place egg in a bowl and whisk. Place your coconut flour in another bowl. Once the oil is hot, coat each piece of tilapia in the egg, then dredge through the coconut flour to coat lightly. Place in hot oil. Turn over after approx. 2 minutes – long enough to brown the tilapia and mostly cook it as well. Cook on the other side for another 1-2 minutes.
Plate tilapia and top with relish. Enjoy!
