I recently had a request for some cold lunches to go. I thought this was a perfect subject for variety, so I reached out to some of my favorite blogger friends for help…ENJOY!

– nuts (each nut has a different nutritional value…pick a variety up in the bulk bins and then make your own snack packs for the week)
– jerky (Steve’s Paleo Goods has very tender jerky…or homemade is always good too!)
– hard-boiled eggs (I boil a dozen of these each week ~ snacks, cut up in salads, deviled eggs…)
– cut up veggies –> carrots, celery, bell peppers, mushrooms, zucchini, and so on!
– fruits and berries –> you know what you like!
– salads (put your dressing on the side so that it doesn’t wilt your greens)
– chilled shrimp (already peeled)
– cold chicken ~ I may be in the minority on this one, but I love cold chicken, so this is also an option. Roast your chicken (for immediate food), boil the bones (for broth), and then make a fantastic soup that you can carry to work the next day!
– meatballs/patties…here is my Ultimate Meatball recipe.
– trail mix (it is actually one of my cereal recipes, great with coconut milk, but it is wonderful eaten dry and on-the-go)
– olives…check out the olive bar at your local grocery store. If you are not familiar with the 20-some olive varieties they have, ask someone who works there or try a few from each variety every week to figure out your preference (there is more to olives than the black and green varieties in cans on aisle 3)…and the adventure is kind of fun!
– smoked salmon, thinly sliced red onions, cherry tomatoes, capers, and a drizzle of high-grade olive oil (just don’t forget your gum for afterwards if you are at work…your coworkers will thank you!).
