Banana Bread Bombs (paleo and gluten-free)


I started out with two really ripe bananas that I needed to use, so I threw together some ingredients in hopes of some nutty banana cookies; however, these came out tasting just like little cakey bites of banana bread!! :-)

Banana Bread Bombs

Ingredients

Directions

  1. Preheat oven to 350 degrees.
  2. Whisk eggs. Stir in  remaining ingredients until blended.
  3. Place small scoops of batter (about 2 teaspoons each) on a parchment paper-lined cookie sheet (or silicone baking mat). The balls should be tightly packed to avoid spreading. Bake for 15 minutes.
  4. Remove from the oven and let rest for 30 minutes. (Optional garnish: drizzle a little dark chocolate ~ you can never go wrong with that!).
  5. Enjoy!

  1. As I am trying to understand this diet, how is chorizo part of Paleo? Thank you very much for any insight.

    • Chorizo is absolutely considered part of the paleo diet; however, you will want to limit it…it is not an everyday food item. With that said, choose organic and uncured…or make it yourself for best results! :-)
