Simple Beef Tenderloin Filet Mignon (paleo and gluten free)

I have been looking at this wonderful piece of beef tenderloin filet mignon at Trader Joe’s for several months. I finally bought it and I was not disappointed. With a side of sweet potato slices and steamed broccolini, this was a simple, yet perfect meal!

Simple Beef Tenderloin Filet Mignon

Ingredients

  • • 1 teaspoon sea salt
  • • 1 teaspoon ground pepper
  • • 1 teaspoon smoked paprika
  • • 1 pound beef tenderloin filet mignon
  • • 2 tablespoons ghee or organic butter, softened

Directions

  1. In a small bowl, combine salt, pepper, and paprika.
  2. Rub this mixture over the beef, top and bottom. Place in the refrigerator.
  3. Preheat oven to 400 degrees F.
  4. Heat pan on high on the stovetop.
  5. Sear meat 1 minute per side stoveop.
  6. Place meat in baking dish. Rub with butter and bake until desired doneness. A meat thermometer is your best friend when cooking meat.
  7. Let rest for 5 minutes.
  8. Slice and serve.
  9. Enjoy!
