Gluten Free Lemon Bars


  • 1 cup cassava flour
  • 1/2 cup butter or ghee, softened (not melted)
  • 1 and 1/3 cup pure maple sugar
  • 3 teaspoons grated lemon peel
  • 3 tablespoons fresh lemon juice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 2 large eggs


  1. Preheat oven to 350 degrees F.
  2. Combine flour, butter, and 1/3 cup of maple sugar until it forms a sticky ball. Press flat into an ungreased 8×8 pan.
  3. Bake for 20 minutes.
  4. Beat remaining sugar, lemon peel, lemon juice, baking powder, salt, and eggs until fluffy. Pour over crust.
  5. Bake for 25 minutes.
  6. Enjoy!
