Ingredients

  • • 1 cup cassava flour
  • • 1/2 cup butter or ghee, softened (not melted)
  • • 1 and 1/3 cup pure maple sugar
  • • 3 teaspoons grated lemon peel
  • • 3 tablespoons fresh lemon juice
  • • 1/2 teaspoon baking powder
  • • 1/4 teaspoon sea salt
  • • 2 large eggs

Directions

  1. Preheat oven to 350 degrees F.
  2. Combine flour, butter, and 1/3 cup of maple sugar until it forms a sticky ball. Press flat into an ungreased 8x8 pan.
  3. Bake for 20 minutes.
  4. Beat remaining sugar, lemon peel, lemon juice, baking powder, salt, and eggs until fluffy. Pour over crust.
  5. Bake for 25 minutes.
  6. Enjoy!
