Paleo Gingerbread Chocolate Chip Cookies

Ingredients

  • • 1 cup pecan meal/flour (make your own quickly HERE)
  • • 1/2 cup cassava flour
  • • 1 teaspoon baking soda
  • • pinch of salt
  • • 1 large egg
  • • 1/2 cup unsweetened almond milk
  • • 1/4 cup honey
  • • 2 tablespoons butter or ghee, melted
  • • 1 tablespoon gingerbread spice (make your own HERE)
  • • 1/2 cup dark chocolate chips (or cut chips from a bar)

Directions

  1. Preheat oven to 350 degrees F.
  2. Combine ingredients. Drop about 2 tablespoons of batter per cookie on a parchment paper-lined baking sheet. Do this 12 times.
  3. Bake for 10-12 minutes until browned. Transfer cookies to a cooling rack.
  4. Enjoy!
