Better Butter Coffee Brownies


  • 3 large egg whites
  • 1/3 cup coconut flour
  • 1/3 cup cassava flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • pinch of salt
  • 1 packet of Coffee Blocks (get yours HERE)
  • 1 medium ripe banana, peeled and smashed
  • 1/3 cup unsweetened applesauce
  • 2 tablespoons honey
  • 1 teaspoon vanilla
  • 1 large egg
  • 1/3 cup chopped dates
  • 1/3 cup dark chocolate chips (or chopped chocolate bar)
  • Drizzle:
  • 1/2 cup dark chocolate chips
  • 2 teaspoons coconut oil
  • 1 tablespoon honey


  1. Lightly grease an 8×8 pan. Line bottom with an 8×8 square of parchment paper.
  2. Preheat oven to 350 degrees F.
  3. Whisk together 3 egg whites until medium peaks form. Set aside.
  4. Combine coconut flour, cassava flour, cocoa powder, baking powder, salt.
  5. In a separate bowl, combine coffee blocks, banana, applesauce, honey, vanilla, and 1 egg.
  6. Add wet mixture to the flour mixture. Fold in dates and chips. Fold in egg whites.
  7. Spoon combined mixture into prepared pan.
  8. Bake for 25 minutes until a toothpick is inserted in the center and comes out clean. Let cool for 30 minutes.
  9. Melt “Drizzle” ingredients in a double boiler (or just a metal bowl over a saucepan filled with about an inch of water).
  10. Pour drizzle over brownies.
  11. Enjoy!
