I have been checking out these Lady Apples at Whole Foods for the past couple of years. I generally throw a batch in the basket so we can just eat these cute little things. This year I decided to make some paleo stuffed apples…the cute way!

Here’s a tip: I used to fill my waffle maker all the way to the edges to make the “pefect” waffle. I now like the rustic feel of just pouring my batter in the center…I love the rough edges that it creates.
