Bacon-Wrapped Asparagus and Pepper
This is super easy and very flexible. Just open your refrigerator and use whatever veggies are available. Next time, I’m going to do zucchini strips and onion slices! This is good as a side, snack, lunch or even an appetizer. Get creative and have fun!
4 asparagus spears
4 bell pepper strips, about 1/4 inch thick
4 slices of natural, nitrate-free bacon
Preheat oven to 350 degrees.
Hold the asparagus strip and snap off the bottoms. There is a natural soft spot and it eliminates the tough end of the asparagus.
Cut the bacon strips lengthwise. Spiral-wrap two long strips of bacon around 1 asparagus spear with 1 bell pepper strip. Do this four times.
Bake for 40 minutes. Enjoy!
