Bite-Sized Blooming Onions in the Air Fryer
From page 58 of The Everything Air Fryer Cookbook, these Bite-Sized Blooming Onions have all the flavor and none of the deep-fried blech!
These little #notpaleo guys are somewhat tedious in the prep, but your guests will flip over the cuteness factor. The reward in praise is worth your careful knife skills. Serve these warm with an awesome dipping sauce.
For a little Southern Comeback Dipping Sauce, mix the following together: 1/2 cup mayonnaise, 2 tablespoons honey, 2 tablespoons ketchup, 1/2 teaspoon Worcestershire sauce, 1/2 teaspoon Dijon mustard, 1/2 teaspoon sriracha, 1 clove minced garlic, 1/4 teaspoon smoked paprika, 1/4 teaspoon salt, 1/4 teaspoon freshly ground black pepper. Refrigerate these combined ingredients covered until ready to serve.

1. Shallowly cut the root end off of each onion so it can sit flat. Peel and discard the skins. Using a sharp knife, gently slice in 5ths, as if you were cutting a pie, about three quarters down through the onion revealing 10 sections, keeping the root intact. Soak the onions in a bowl of ice water for 30 minutes to help spread the sections. Transfer onions to a paper towel and remove excess water.
2. Add flour, salt, ground mustard, and chili to a small bowl.
3. Whisk together egg and milk in another small bowl.
4. Combine breadcrumbs and corn meal in a shallow dish.
5. Preheat air fryer at 375º for 3 minutes.
6. Roll onions in flour mixture. Shake off excess flour. Dredge onions in egg mixture. Shake off excess. Roll in breadcrumb mixture. Transfer to a plate. Repeat with remaining onions.
7. Add ½ of onions to fryer basket. Cook for 7 minutes. Transfer to plate and repeat with remaining onions. Sprinkle with salt to taste. Serve warm with dipping sauce.
