Blueberry Choco Chip Cookies
For many, January has been a month a “back-to-basics” and resetting our bodies. However, I have two young girls in the house and they revolted last night and begged for cookies. This is what I came up with!
1/4 cup blueberries
1/4 cup raw honey
1/2 cup creamy almond butter
1/2 cup coconut flour
1 large egg
1 teaspoon baking powder
1/2 teaspoon vanilla
1/3 cup chopped 72% dark chocolate
Preheat oven to 350 degrees.
In a small saucepan, place blueberries and honey on medium heat. Gradually smoosh the blueberries against the side of the pan until smooth.
Transfer the blueberry mixture to a mixing bowl. Add the almond butter, flour, egg, baking powder and vanilla. Mix until blended. Stir in dark chocolate.
Spoon tablespoons of batter about a 1/2 inch apart on a parchment paper lined baking sheet. These cookies won’t spread, so you may want to give them a little pat down before cooking.
Bake for 10 minutes. Let stand for 15 minutes.
Yields about 18 cookies.
