Chicken and Red Cabbage Slaw
I made this for lunch today using ingredients that I already had around the kitchen. This recipe was made for one, so if you are serving others, just double or triple it.
1 chicken breast, pounded flat and cut into small strips
1 tablespoon bacon grease (I had it leftover from breakfast)
1 small apple, grated
1 cup red cabbage, shredded
1 tablespoon parsley
Pinch garlic powder
Pinch sea salt
Pinch ground pepper
1 tablespoon minced shallot (1 small)
1 tablespoon avocado oil
1 tablespoon balsamic vinegar
1 tablespoon slivered almonds
Heat bacon grease on medium-high heat in a skillet. Add chicken. Cook for 4-5 minutes stirring often until cooked through. Add shallot, cabbage, parsley, garlic powder, sea salt and pepper.
Grate apple to the core into a mixing bowl. I kept the skin on, but this is optional. Add skillet ingredients to the bowl. Drizzle balsamic vinegar and olive oil over the ingredients. Add slivered almonds. Toss. Serve immediately.
