Instant Pot Three Bean Chili (gluten-free)

So, a gluten-free gal, a clean-eating guy, and a vegan walk into a bar…what do you feed them? Three Bean Chili, of course! This warm and nourishing bowl of chili will have folks licking their flavor-filled and nutrient-rich bowls. Beans are naturally gluten-free, but read those labels, as some brands may contain additives such as wheat starch or wheat flour.

1. Press the Saute' button on the Instant Pot. Heat oil 30 seconds. Add the onion, bell pepper, and carrot. Stir-fry 5 minutes until onions are translucent. Add garlic an heat for an additional minute.
2. Add remaining ingredients to pot and stir to combine. Lock lid.
3. Press the Meat button and cook for default time of 35 minutes. When timer beeps, let pressure release naturally until float valve drops and then unlock lid.
4. Ladle chili into four bowls and serve warm.

Ingredients

  • 1 tablespoon olive oil
  • 1 small red onion, peeled and diced
  • 1 medium green bell pepper, seeded and diced
  • 1 large carrot, peeled and diced
  • 4 garlic cloves, minced
  • 1 (15.25-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 small jalapeno, seeded and diced
  • 1 teaspoon salt
  • 1 (28-ounce) can diced tomatoes, including juice
  • 1/4 cup vegetable broth

Directions
