Mash It Up! Mashed Potato Alternatives
From left to right (or bottom to top): sweet potato, cauliflower, broccoli, parsnips
Place roughly chopped vegetables (I added a couple of cloves of garlic to the parsnip pot) in a pot of salted water on the stove. Bring to a boil. Reduce to medium heat and let cook until fork tender.
Drain water and then transfer to your mixing bowl.
Blend until desired consistency with preferred spices and oil. Depending how much you are cooking will determine the amount that you use. Be sparing on the oils as it does not take much to help along the “mash” process and the rest is just for flavor so taste you go.
Below is what I used, but don’t be afraid to try curries, celery salt, hot sauce and flavored oils.
Sweet Potato: I added cinnamon, ghee, and a dash of organic whipping cream.
Cauliflower: I added a little ghee, salt/pepper, olive oil at first and then hand-stirred in some crispy bacon.
Broccoli: I added horseradish, salt/pepper, avocado oil and ghee.
Parsnip: I added rosemary olive oil, ghee and salt/pepper.
