Refrigerator Pickled Ramps
These Refrigerator Pickled Ramps were inspired from my “Wild Ramp Hike” at Foxhollow Farm. Sherry Hurley (proprietress, Farm to Fork Catering) sent us home with her wonderful pickled ramp recipe so I “paleotized” it and then used spices I already had on-hand. Thank you Sherry for the inspiration!! I have to admit that I had never eaten a ramp before today. They are amazing…the birthchild of an onion and garlic. Ramps are a spring delicacy also know as wild leeks.
We started off by taking a hay ride to the edge of the woods. It was a gorgeous day with blue skies and just enough breeze to make the hike very enjoyable.
Once you find them, simply take a small shovel and dig down…easy as that!
Served great as a garnish with steaks, salads or just for snacking!
