Smoked Honey & Lime Salmon
This is such a simple recipe, but inspired by some “smoked honey” I picked up at my Farmer’s Market a few weeks ago. The lady I bought this from actually used a smoker to make this (as I thought it may have been a spice that gave it a smoky flavor). The honey had a beautiful amber color and the smoker added some richness to the flavor ~ it was amazing! Of course the recipe calls for the smoked honey, but use whatever you have on-hand…the salmon, honey, lime and salt combine beautifully!
Salmon fillets (as many as you want to cook)
1T smoked honey per fillet that you are cooking
sea salt
fresh lime slices (about three per fillet)
Pre-heat oven to 350 degrees.
Place fillets in a baking dish. Brush each one with the honey. Season with sea salt. Place lime slices atop.
Cook til desired doneness (until opaque in the center).
