Taco Tuesday Meatloaf
Whether it’s #MeatloafMonday or #TacoTuesday, this meal is packed with Mexican flavors that will give you an alternate option. The spicy chorizo is tempered with the ground chuck, and even more so by serving your meatloaf with some fresh guac and diced tomatoes or homemade salsa! Also, add a poached egg atop a slice in the morning for a leftover breakfast!
Ingredients
Directions
1. Preheat oven to 350 degrees F.
2. In a large bowl, combine ingredients until well-mixed. Using your hands really helps achieve this.
3. On a baking sheet with sides and a piece of parchment paper, form a loaf with the meat mixture.
4. Bake for 60 minutes until internal temperature reaches 160 degrees F (a meat thermometer is one of my most used kitchen gadgets). Remove from oven and let rest for 30 minutes.
5. Slice and serve with optional garnishes.
6. Enjoy!
