Toasted Coconut Flakes
This is a very simple snack. My daughter is always wanting me to buy coconuts. She likes the coconut water, but not the actual meat. So, this one was for her.
1 coconut
2T raw honey, slightly melted
1/4 tsp sea salt
Preheat oven to 350 degrees.
Crack coconut and drain water into a bowl.
Chunk off pieces of the coconut and place in the coconut water as you work.
Once the coconut is completely chunked, rinse pieces in a strainer.
Using a potato peeler, peel coconut flakes. Transfer to a clean bowl. Add honey and salt. Stir to evenly coat.
Transfer to a parchment paper-lined baking dish and spread evenly.
Cook for 20 minutes. At each 5 minute interval, stir and flip the coconut flakes.
Turn oven off and let the coconut flakes dry out in the oven for another 7 minutes.
Remove from oven and let sit for 30 minutes.
