- In a cast iron skillet, heat turkey, onions, and mushrooms over medium-high heat until turkey is cooked. Stir in chili powder, garlic, parsley, and salt. Cook for an additional 3 minutes. Remove from heat.
- Poach eggs. (Poach one egg per person being served)
- Garnish skillet mixture with eggs, avocado, cilantro, tomatoes, green olives, and optional jalapeño.
- Enjoy!
